There is nothing that I love more than cozying up with loved ones at home on a cold winter night — cuddling up with my favorite blanket, sipping hot tea and watching (usually bad) Christmas movies. As the temperatures drop, our bodies experience a seasonal transition — where we once craved cool fruits and raw vegetables in the heat of the summer, we begin to seek heartier foods. Lately, I've been hardcore crushing on the soup recipes that we enjoy with The Radiant Life (and The Radiant Slim Down)... Mmm, mmm, mmm.
Here are a few delicious soup recipes to whip up at home or for your holiday guests!
Cauliflower and Chickpea Stew with Couscous: One of my absolute FAVORITE recipes of all time! I am a sucker for cauliflower, but this combines unbelievable deliciousness with a heartiness that will stick to your ribs. So deeply satisfying and just plain ol’ yummy. (Courtesy of Smith & Ratliff)
Spiced Red Lentil, Tomato, and Kale Soup: This delicious dish left our house smelling heavenly and made enough for us to freeze for later. This spiced soup packs a protein punch with its yummy red lentils and ups the nutrition game with the addition of calcium-packed, vitamin K-heavy kale! (Courtesy of Oh She Glows)
Winter Minestrone Soup: I think I drooled a little just looking at the pictures of this soup... Whoops. It's got everything. Creamy. Pesto. Grass-fed butter. Get some, babes. (Courtesy of Against All Grain)
Leftover Roast Chicken Soup with Roasted Vegetables: Looking for something easy to put together after work that will satisfy after a long day at the office? For all of you meat eaters, make it an easy and nutrient-packed dinner tonight. Plus, my guess would be that this would be delicious with a little leftover turkey, as well!
